Ingredients
11.5 OZ / 320 G bitter sweet chocolate
5.5 OZ / 150 G heavy cream
2 OZ / 50 G butter
1 TBSP bourbon
2 TBSP cocoa powder
7 OZ / 200 G dark chocolate
Directions
Add your bitter sweet chocolate, butter, liqueur and cream to the mixing bowl. Cook for 4 minutes / 140°F|60°C / speed 2 / stir. Once cooked, spread the chocolate mix onto a flat plate and allow to cool in the fridge for 30 minutes.
Add the dark chocolate to the mixing bowl and melt the chocolate for 5 minutes / 150°F|65°C / speed 2 / stir.
Divide the truffle into 30-32 balls and then using a tooth pick or skewer, dip half of them in the melted dark chocolate. Shake off the excess chocolate. Roll out the other half of the truffle mix in cocoa powder.
