Ingredients
7 OZ / 200 G all purpose flour
1 TBSP sugar
1 EA egg
0.5 TSP vanilla extract
3.5 OZ / 100 G ricotta cheese
5.5 OZ / 150 ML milk
2 TSP baking powder
1 EA lemon
1 TBSP butter
Directions
Zest and juice your lemon, then set aside.
Add the egg, vanilla, sugar, baking powder and flour to the mixing bowl. Mix with the butterfly whisk inserted for 30 seconds / speed 3.
Use the spatula to scrape down the sides of the mixing bowl. Add the ricotta cheese, lemon zest and juice to the mixing bowl. Remove the measuring cup, then slowly add the milk a little at a time through the hole in the lid until the batter is smooth. Mix with the measuring cup removed for 1 minute / speed 4.
Using a nonstick pan over medium heat, lightly coat the pan with butter. Pour a small ladle of the batter into the pan. After 30 seconds, carefully flip the pancake and repeat the cooking on the other side.
Place the pancakes on the plate, then spoon over some extra ricotta cheese and lemon juice.

TIP:
Make sure you keep an eye on the heat if the pancake gets too brown.
