Ingredients
0.5 TSP dried oregano
2 PINCHES paprika powder
1 PINCH pepper
0.5 TSP dried thyme
1 PINCH cayenne pepper
1 PINCH cumin powder
2 TBSP olive oil
12 EA prawns
1 EA chorizo
1 CLOVE garlic
1 EA shallot
12.5 OZ / 360 G avocados
0.5 EA lime (juice)
15 EA cherry tomatoes
Directions
Mix the herbs and spices with the olive oil. Wash the prawns, pat dry and marinate in the spiced oil.
Peel garlic. Peel and halve shallot. Add shallot and garlic into the mixing bowl, chop with TURBO button for 2 seconds. Use spatula to scrape down the sides.
Halve avocados, remove the stones and scrape the flesh out of the skin. Add to the mixing bowl with the lime juice, make sure the measuring cup is inserted, blend for 30 seconds / speed 4.
Dice the tomatoes and stir them into the avocado cream using the spatula by hand. Season to taste with salt and pepper. Divide the mixture between small pudding bowls.
Remove the thin skin from the chorizo and cut the sausage into 12 slices. Brown for 5 minutes on a medium heat in a non-stick frying pan. Remove from the pan and fry the prawns for 5 minutes.
Thread a piece of chorizo and a prawn on a skewer (or toothpick). Serve the cooked meat skewers with the avocado cream and cherry tomatoes. Enjoy!
