Broccoli and Beer Cheese Soup
A rich and creamy soup fortified with beer for exceptional flavor.
Ingredients

12 OZ / 335 G broccoli florets

6 OZ / 170 G celery ribs

8 OZ / 225 G carrots

7.5 OZ / 210 G yellow onions

3 TBSP butter

2.5 OZ / 65 G all-purpose flour

32 OZ / 950 ML low-sodium chicken broth

8 OZ / 240 ML beer or non-alcoholic beer

8 OZ / 230 G cream cheese, cubed

1 TSP fine sea salt

0.5 TSP black pepper

12 OZ / 340 G shredded Cheddar cheese
Directions
Add broccoli to mixing bowl and chop for 5 seconds / speed 8. Scrape broccoli into a medium bowl.
Cut celery into pieces. Cut carrots into pieces. Cut onion into quarters, then peel and cut out the root end.
Add butter, celery, carrots, and onion to the mixing bowl and chop for 5 seconds / speed 8. Scrape down sides of mixing bowl.
Remove the measuring cup and sauté vegetables for 8 minutes / 250°F|120°C / speed 1.
Add flour and stir in flour for 1 minute / 250°F|120°C / speed 1.
Add broccoli, broth, beer, cream cheese, salt, and pepper to mixing bowl and cook for 30 minutes / 212°F|100°C / speed 1.
Add Cheddar to the mixing bowl and cook for 3 minutes / 212°F|100°C / speed 1.
Taste soup and add more salt if desired.
Divide soup among serving bowls and top with desired toppings.
