This cold soup has everything you need in a tomato soup. Made from fresh tomatoes yet bursting with flavor.
Ingredients
2.5 OZ / 70 G onion
1 EA garlic clove
2 TBSP olive oil
1 TSP sugar
10.5 OZ / 300 G cherry tomato
21 OZ / 600 G canned chopped tomatoes
3.5 OZ / 100 ML vegetable stock
1 TSP salt
0.25 TSP pepper
10 EA basil leaves
4 TSP crème fraiche
Directions
Peel onions and garlic. Quarter the onions and add both to the mixing bowl. Chop for 8 seconds / speed 8. Use spatula to scrape down the sides of the bowl.
Add olive oil to the mixing bowl. Remove the measuring cup and sauté for 4 minute / 212°F|100°C / speed 1.
Add the cherry tomatoes, stock and chopped tomatoes to the mixing bowl. Lock the measuring cup and blend for 45 seconds / speed 9. Use the spatula to scrape down the sides of the bowl.
Season with salt and pepper, then blend the soup again for 45 seconds / speed 9.
Pour the tomato soup into soup bowls and serve with crème fraiche and strips of basil on top. Enjoy!

TIPS:
You can make this the night before and leave in the fridge to chill down.
Use only good quality tomatoes to maximize the flavor.
