Green Chilaquiles is a dish made of a green tomatillo spicy sauce. It usually goes with chicken, beef, or egg and tortilla chips. It is garnished with cream, onion and fresh cheese. It is a dish common for breakfast.
Ingredients
26.5 OZ / 750 ML water
7 OZ / 200 G tomatillo
2 EA serrano pepper
17.5 OZ / 500 G chicken breast
7 OZ / 200 ML chicken stock
2 OZ / 50 G cilantro
2 OZ / 50 G onion
1 EA garlic clove
1 TSP salt
3.5 OZ / 100 G tortilla chips
3.5 OZ / 100 G sour cream
1 TSP / 5 G green onion
2 OZ / 50 G crumbled fresh cheese
Directions
Cut the chicken into strips. Peel the garlic and onion. Cut the tail of serrano peppers.
Place the tomatillo and the serrano peppers in the simmering basket and insert it to the mixing bowl along with water. Place the chicken in the deep steaming tray. Attach the steaming trays to the mixing bowl. Steam the chicken and cook your veggies for 10 minutes.
Once everything is cooked, remove the water, then add back the tomatillo and serrano peppers to the mixing bowl, along with the chicken stock, cilantro, onion, garlic and salt to taste. Close the lid and process with the measuring cup inserted for 1 minute / speed 7.
Cook the sauce with the measuring cup removed for 8 minutes / 212°F|100°C / speed 3. In the meantime, shred the chicken.
On a plate, place the tortilla chips, chicken and a generous amount of green sauce. Finish your dish with sour cream, slices of onion, crumbles of fresh cheese and cilantro leaves. Enjoy your dish!
