Aperol Lemonade is what you need on a hot day. Add a shot of Aperol to chilled lemonade and top with soda for a sweet and refreshing cocktail.
Ingredients
3.5 OZ / 100 G sugar
5 EA lemon
2 OZ / 50 ML water
3.5 OZ / 100 ML aperol
17.5 OZ / 500 ML soda water
Directions
Carefully remove the peel from the lemon with a knife or peeler, reserving some of the peel for garnish. Quarter the peeled lemons and remove most of the seeds. With the measuring cup inserted, blend the lemon for 45 seconds / speed 10. Remove from the mixing bowl and reserve for later. Clean out the mixing bowl.
Add your sugar and water to the mixing bowl. With the measuring cup inserted, cook your syrup for 10 minutes / 250°F|120°C / speed 3 / stir. Once cooked, allow your syrup to cool down in the mixing bowl for 10 minutes.
TIP: Place your mixing bowl in an ice bath to cool down faster.
Add your processed lemons back to the mixing bowl. Mix for 1 minute / speed 3 / stir. Mixing the lemonade again will give a shiny finish to your drink.
Once done, pass your lemonade through a sieve then pour it into a third of a glass with a little ice in. Add a shot of Aperol into the glass, then top with soda.

TIPS:
If the syrup is too strong for your taste, add some extra water to the glass.
You can also skip sieving the mix for a more textured finish.
