Curried Peanut Butter Soup
A vegan-friendly curried peanut butter soup with sweet potato.
Ingredients

17.5 OZ / 500 G sweet potato

2 TBSP curry powder

3.5 OZ / 100 G peanut butter

35.5 OZ / 1 L vegetable stock

1 TSP salt

0.5 TSP ground pepper

1 TBSP olive oil
Directions
Wash, peel and cut the sweet potato. Add sweet potato to the mixing bowl. Chop for 10 seconds / speed 6.
Add your curry powder and oil to the mixing bowl. Sauté the sweet potato for 7 minutes.
Add the vegetable stock, peanut butter, salt and pepper. Cook the soup for 25 minutes / 230°F|110°C / speed 2 / stir.
Blend your soup with the measuring cup inserted for 30 seconds / speed 8.
