When it comes to seafood, few things are more satisfying than a perfectly cooked halibut fillet, flaky and tender with a delicate flavor that pairs perfectly with a bright, zesty lemon sauce. So why not treat yourself to a taste of coastal cuisine and indulge in the simple pleasures of fresh, flavorful seafood?
Ingredients
3 EA halibut
10.5 OZ / 300 ML fish stock
10.5 OZ / 300 ML fennel
2 OZ / 50 G butter
1 TSP salt
1 OZ / 25 G flour
1 OZ / 30 G parsley
4 TBSP olive oil
0.5 EA lemon juice
1 TSP pepper
Directions
Add the parsley to the mixing bowl. Chop for 3 seconds / speed 10. Remove from the mixing bowl and clean out the mixing bowl well.
Slice the fennel very thinly and lay it on both steaming trays. Season the fennel and add oil to the fish. Lay the fish on top of the fennel.
Add the butter, stock and flour to the mixing bowl. Attach the steamer and steam the fish for 20 minutes.
Add your salt, lemon juice and the chopped parsley to the mixing bowl. Reattach the steamer trays and cook again for 1 minute / 140°F|60°C / speed 4.
Carefully remove the fish from the steaming trays onto a plate and serve with the fennel. Drizzle the sauce over the top.
