1 OZ / 25 G parmesan
35.5 OZ / 1 L water
1 PINCH salt
1 PINCH pepper
Directions
Add the water to the mixing bowl with a generous pinch of salt. Preheat the water for the pasta for 10 minutes / 265°F|130°C / speed 1 / stir. While the water is heating, slice your mushrooms thinly and chop your ham into small cubes.
Add your pasta to the mixing bowl. Cook until al dente for 9 minutes / 250°F|120°C in sauté mode. Once cooked, strain using the simmering basket, then add to a large bowl. Make sure you reserve a little of your pasta water, in case you need to loosen your pasta. Keep warm for later.
Peel and quarter the onion, then add them to the mixing bowl along with the thyme. Chop the onion till finely chopped for 10 seconds / speed 5. Scrape down the sides of the mixing bowl.
Add the oil and mushroom to the mixing bowl. Sauté them until softened for 5 minutes.
Add the milk, flour and ham to the mixing bowl. Cook the sauce with the measuring cup inserted for 15 minutes / 212°F|100°C.
Once the sauce is cooked, add the pasta, cream, cheese and seasoning to the mixing bowl. Mix the contents altogether for 20 seconds / speed 2 / stir. If it is too thick, add some pasta water to loosen up the sauce.
