Perfect for new year's, have a lucky start of the year with black-eyed peas in this recipe.
Ingredients
28 OZ / 800 G canned black-eyed peas (net weight)
7 OZ / 200 G smoked slab bacon
7 OZ / 200 G onion
3.5 OZ / 100 G green bell pepper
3.5 OZ / 100 G celery
2 TSP cajun seasoning
10.5 OZ / 300 ML chicken stock
1 TSP dried thyme
1 OZ / 30 ML olive oil
1 TSP oregano
2 CLOVES garlic
Directions
Dice the slab bacon into small cubes.
Prepare the vegetables by peeling the onion and garlic, then roughly chop the onion. Roughly chop the celery. Deseed the bell pepper and roughly chop your bell pepper.
Add the oil, onion, bell pepper, garlic and celery to the mixing bowl. With the measuring cup inserted, chop your vegetables for 15 seconds / speed 6. Scrape down the sides of the mixing bowl.
Add the bacon and cajun spice to the mixing bowl. Remove the measuring cup, then sauté for 14 minutes / 265°F|130°C. Scrape down the sides of the mixing bowl.
Add the stock, thyme, oregano and canned black-eyed peas to the mixing bowl. Insert the measuring cup, then cook for 20 minutes / 212°F|100°C / speed 1 / stir.
Once the peas are soft, adjust the seasoning and serve with cornbread or rice.
