Try this sweet cupcake at home, celebrate with these festive cupcakes and share with your loved ones!
1 EA egg white
1 OZ / 25 G water
9 OZ / 250 G butter (room temperature)
9 OZ / 250 G cream cheese
7 OZ / 200 G cake flour
10 OZ / 275 G sugar
1 TSP baking powder
0.5 TSP vanilla extract
2 EA eggs
5.5 OZ / 150 G milk
7 OZ / 200 G soften butter
3 DROPS red food coloring
3 DROPS blue food coloring
3 TBSP cocoa powder
Add your softened butter to the mixing bowl and 7 OZ / 200 G sugar, beat with the butterfly whisk inserted. Then blend for 2 minutes / speed 3 / stir.
Break your eggs into a small bowl then add your vanilla and milk to the beaten eggs. Beat the batter mix again for 2 minutes / speed 3 / stir. Whilst spinning slowly, add the egg mix a little at a time through the hole in the lid till fully incorporated. Scrape down the sides.
Add your flour, baking powder and cocoa powder to the mixing bowl. Mix for 30 seconds / speed 3 / stir. Divide the mix into 12 cupcake cases evenly then clean out the mixing bowl.
Preheat your oven to 180°C / 360°F and bake your cupcakes for 15 minutes or until fully cooked. Allow your cupcakes to completely cool down.
Add your water and remaining sugar to the mixing bowl and cook the syrup for 4 minutes / 265°F|130°C / speed 1. Carefully empty the syrup to a small bowl and wash the mixing bowl well.
Add your egg white to the mixing bowl and whip with the butterfly whisk inserted for 4 minutes / speed 4. After two minutes, slowly add the hot syrup to the mixing bowl through the hole in the lid.
Add the cream cheese and butter to the mixing bowl and beat again for 1 minute / speed 4. Allow to cool.
Divide the frosting into 3 bowls and make the red, white and blue frosting. Pipe the frosting on top of the cup cakes and garnish with some sprinkles of star candy.
Enjoy your dish! The frosting can be made in advance. Keep in the fridge but allow to get to room temperature before piping.
