The refreshing parfait is perfect to cool you down during Independence day!
Ingredients
1 EA cantaloupe melon
10.5 OZ / 300 G greek yoghurt
1 OZ / 25 G sugar
10.5 OZ / 300 G heavy cream
3.5 OZ / 100 G granola
1 TBSP fresh mint
Directions
Scoop half the melon into small balls for the parfait. The remaining flesh can be scraped out and added to the mixing bowl. Puree the melon for 15 seconds / speed 3. Remove from the mixing bowl and reserve for later. Clean the mixing bowl.
With the butterfly whisk inserted, add the heavy cream and sugar to the mixing bowl, whip for 2 minutes / speed 4. Scrape down the sides.
Thinly slice your mint then add it to the mixing bowl along with the Greek yoghurt. Mix for 20 seconds / speed 1.
In large glasses, build your parfait by adding some melon balls with some of the puree to the bottom of the glass. Add some of the cream mixture on top and layer with granola. Repeat this process until you have many layers.
