Ingredients
6 EA egg white
1 TSP cream of tartar
7 OZ / 200 G powdered sugar
1 TBSP sugar
10.5 OZ / 300 ML whipping cream
4 EA passion fruit
5.5 OZ / 150 G strawberries
1 TSP vanilla bean paste
Directions
Preheat the oven to 120°C / 212°F. While waiting for the oven, whisk the egg. Make sure the mixing bowl is clean. Add the egg white (room temperature) and cream of tartar to the mixing bowl with the butterfly whisk. Whisk the egg for 3 minutes / 115°F|45°C / speed 3.
With the measuring cup removed, start whipping your eggs again for 4 minutes / speed 4. Whilst whipping, add the powdered sugar into the mixing bowl 1 tbsp at a time till fully incorporated.
Remove the meringue and spread in a 5cm / 2-inches rounds on parchment paper. Bake without the fan for 1 to 1.5 hours till crispy, but also soft in the middle. Once done, allow to cool.
After your meringue is cooked, whip your cream by adding the whipping cream, vanilla and sugar into the mixing bowl. Insert the butterfly whisk and whip your cream with the measuring cup inserted for 1 minute 30 seconds / speed 4.
Top your meringue with the cream on a serving plate and garnish with passion fruit and fresh strawberries.
