Tender peaches soaked in red wine and infused with star anise and cinnamon. This makes a delicious, grown up dessert.
Ingredients
4 EA peaches
9 OZ / 250 G sugar
26.5 OZ / 750 ML red wine
3 EA whole star anise
1 EA orange
1 EA cinnamon stick
Directions
Prepare the peaches by splitting them in half and removing the stone. Place into the simmering basket and reserve for later.
Add wine to mixing bowl along with the sugar, star anise and cinnamon stick. Set the simmering basket into the mixing bowl. Insert the measuring cup and cook the peaches for 30 minutes / 230°F|110°C / speed 1.
Remove the peaches from the mixing bowl before carefully removing the skin. Place peaches into a medium sized bowl and reserve for later.
Add the juice of an orange to the mixing bowl. With the measuring cup inserted, cook for 30 minutes / 250°F|120°C / speed 1. Reducing the liquid will help intensify the flavor. Once cooked, pour the liquid over the peaches and allow to infuse overnight.
