Bright and vibrant salad with bulgur wheat and lots of colorful vegetables.
Ingredients
7 OZ / 200 G bulgur wheat
2 EA romano Pepper
3.5 OZ / 100 G radish
2 EA oranges
2 TBSP mint
1 TBSP parsley
4 TBSP olive oil
10.5 OZ / 300 G edamame beans
35 OZ / 1000 ML water
1 PINCH salt
1 PINCH pepper
Directions
Add your bulgur wheat to the mixing bowl then add your water with a pinch of salt. Place your edamame in the deep steaming tray and attach onto the mixing bowl. Steam your bulgur wheat and beans for 15 minutes. Once cooked, remove the beans from their pods and strain the bulgur wheat, then allow to cool.
While the bulgur wheat cooks, prepare your vegetables by thinly slicing the romano pepper and radish. At this stage, segment your oranges by removing the skin and take out the flesh between the pith. Squeeze the excess juice into a bowl and reserve for your dressing.
Add your mint, olive oil, orange juice and parsley to the mixing along with some seasoning. Make the dressing by mixing it for 20 seconds / speed 10.
Mix the dressing into the bulgur wheat and add onto a serving dish. Garnish with the peppers, beans, orange segments and radish.
