Tender pears infused with glorious saffron makes a delicious dessert.
Ingredients
2 PINCHES saffron
42.5 OZ / 1200 ML water
2 TBSP fresh ginger
4 EA conference pears
10.5 OZ / 300 G sugar
26.5 OZ / 750 ML white wine
3 EA whole star anise
Directions
Add water to mixing bowl along with the sugar and wine. Set simmering basket into mixing bowl. Slice ginger and add to simmering basket with the saffron strands and star anise. Remove the measuring cup and heat the water for 15 minutes / 230°F|110°C / speed 1.
Peel pears and remove core from bottom. Set simmering basket into mixing bowl and add pears. Insert the measuring cup and poach pears for 1 hour / 212°F|100°C / speed 1. Remove simmering basket and let excess liquid drip back into mixing bowl.
With the measuring cup removed, reduce the content of the mixing bowl to intensify the flavor for 45 minutes / 250°F|120°C / speed 1. Once cooked, pour the liquid over the pears and allow to infuse overnight.
Serve with some mascarpone cheese. Serve the liquid as a drink.
