A great avocado meal for a keto diet, topped with prawns and homemade cocktail sauce.
Ingredients
2 OZ / 50 G ketchup
0.5 EA lemon
3.5 OZ / 100 G mayonnaise
0.5 EA shallot
1 TSP creamed horseradish
0.5 TSP worcestershire sauce
2 EA avocado
12 EA tiger prawn tails
17.5 OZ / 500 ML water
Directions
Peel your shallot then add it to the mixing bowl and chop it up for 10 seconds / speed 10.
Add ketchup, mayonnaise, horseradish, Worcestershire sauce, lemon juice and zest to the mixing bowl. Mix for 30 seconds / speed 2. Transfer to another bowl and chill until ready to use. Clean out the mixing bowl.
Make sure you remove the tract from the prawn then add them to the simmering basket. Add your water to the mixing bowl and insert the simmering basket. Steam with the measuring cup in place for 5 minutes. After cooked, remove your simmering basket and let the prawns to cool down.
Once your prawns are cooled down, slice 8 of them up and mix through the cocktail sauce. Use the remaining 4 for garnish. Slice the avocados in half and remove the stone. Stuff the avocado with the prawn mix and add a whole prawn tail on top of each one.
