Ingredients
17.5 OZ / 500 G sweet potato
7 OZ / 200 G amaranth
24.5 OZ / 700 G vegetable stock
0.5 EA lemon
1 TBSP wholegrain mustard
3 TBSP olive oil
1 TBSP white wine vinegar
1 TSP salt
1 TSP pepper
3 TBSP parsley
Directions
Peel your sweet potato and cut into small cubes. Add into the deep steaming tray and reserve for later. Soak your amaranth in water for at least an hour.
Add your amaranth to the mixing bowl along with the stock. Attach the deep steaming tray and cook the sweet potato for 25 minutes. While your potato cooks, chop up your parsley.
Once cooked, strain the amaranth then add back to the mixing bowl with your lemon juice, whole grain mustard, parsley, vinegar, olive oil, salt and pepper. With your butterfly whisk inserted, mix the dressing for 20 seconds / speed 1 / stir. Place your sweet potato in a bowl and pour over the contents of the mixing bowl. Fold well and garnish with parsley.
