This traditional Mexican dish is made with pork, peanuts, peppers, and bread.
Ingredients
1.5 OZ / 40 G lard
0.5 EA onion
1 EA garlic clove
1 EA green apple (sliced)
4 EA tomatoes
1 EA dried ancho peppers
2 EA dried pasilla peppers
1 EA dried guajillo peppers
2 EA white bread slices
1 EA whole clove
3 EA whole allspice
0.25 TSP cumin seed
0.5 TSP coriander seeds
0.5 TSP dried oregano
2 TBSP brown sugar
17.5 OZ / 500 ML chicken stock
2.5 OZ / 70 G pumpkin seeds
2.5 OZ / 70 G peanuts
2 EA mexican chocolate bar
1 TSP salt
1 TBSP sesame seeds
Directions
Peel and roughly chop the onion. Peel the garlic. Roughly cut the white bread and quarter the tomatoes.
Add the onion and garlic into the mixing bowl. Chop with the measuring cup inserted for 5 seconds / speed 5. Scrape down the sides.
Add the lard, apple, all the dried peppers and the white bread slices into the mixing bowl. Using the sauté mode, sauté with the measuring cup inserted for 6 minutes / 230°F|110°C. Scrape down the sides of the mixing bowl.
Add the clove, allspice, oregano, coriander seeds, brown sugar, tomatoes, chicken stock, pumpkin seeds, peanuts, salt and chocolate into the mixing bowl. Cook everything together with the measuring cup inserted for 25 minutes / 230°F|110°C / speed 2 / stir.
Once cooked, scrape down the sides of the mixing bowl, then blend everything until it is very smooth with the measuring cup inserted for 1 minute / speed 7.
