Ingredients
6 OZ / 180 G onion
0.5 OZ / 20 G fresh ginger
4 EA garlic
17 .5 OZ / 500 G chicken breast
1 TBSP vegetable oil
2 TBSP butter
2 TBSP curry powder
1 TBSP garam masala
1 TSP ground turmeric
2 TSP paprika
5 OZ / 140 G tomato paste
4 OZ / 120 G coconut milk
1 OZ / 30 G cream
1 TBSP cilantro
1 TSP salt
10.5 OZ / 300 ML chicken stock
Directions
Peel and roughly chop the onion into 1-inch pieces. Peel and finely chop the ginger and garlic. Cube the chicken breast.
Once the pressure cooker is preheated, add the oil and chicken cube to the pressure cooker bowl and pan-fry for 4 minutes / 360°F|180°C on each side using the sauté mode for. Remove and set aside.
Add the chicken cube to the pressure cooker bowl and pan-fry for 4 minutes / 360°F|180°C each side. Remove and set aside.
Add the butter. onion, ginger, garlic, curry powder, garam masala, ground turmeric, paprika and tomato paste. Cook for 5 minutes / 360°F|180°C in sauté mode and keep stirring it.
Add back the chicken and stock. Cook in high pressure cook mode for 4 minutes.
After the chicken is cooked, add the coconut milk, cream and salt. Mix well.
