Ingredients
1 OZ / 30 ML olive oil
3.5 OZ / 100 G onion
2 CLOVES garlic
2 OZ / 50 G celery
2 OZ / 50 G carrot
5.5 OZ / 150 G red bell pepper
1 TBSP cajun seasoning
9 OZ / 250 G tomatoes
2 OZ / 50 ML white wine
2 TSP smoked paprika
1 TSP hot sauce
10.5 OZ / 300 G bomba rice
17.5 OZ / 500 ML chicken stock
14 OZ / 400 G shrimps
14 OZ / 400 G chicken breast
7 OZ / 200 G andouille sausage
1.5 TSP salt
0.5 TSP saffron
1.5 TSP black pepper
Directions
Add olive oil to the pressure cooker bowl. Heat up the pressure cooker using sauté mode for 10 minutes until it says HOT.
Peel the carrot, onion, garlic and celery. Deseed the red bell pepper. Finely chop the carrot, onion, garlic, celery, red bell pepper. Roughly chop the tomatoes. Soak the saffron with white wine. Slice the sausage and dice the chicken breast.
Add the onion, carrot, celery, red bell pepper, tomato and garlic to the pressure cooker. Cook for 8 minutes / 360°F|180°C in sauté mode and keep stir.
Add the paprika, cajun seasoning and white wine and saffron mix to the vegetables. Cook for 3 minutes / 360°F|180°C in sauté mode and keep stirring.
Add the rice to pressure cooker and cook for 4 minutes / 360°F|180°C, keep stirring.
Pour in the stock, salt and black pepper, along with sausage and diced chicken.
Close the lid and pressure cook at high pressure for 8 minutes.
Once done, release the pressure and arrange the prawn on top. Close the lid and pressure cook at high pressure for 5 minutes.
Enjoy your dish! Garnish with lemon and green onions.
