Celeriac is a great alternative to potato as it has the same structure but incredibly low in carbs, making it perfect for the keto diet.
Directions
Trim the skin off the celeriac then roughly chop. Add to the mixing bowl. Chop for 10 seconds / speed 5.
Add your stock and butter to the mixing bowl, then cook your puree for 30 minutes / 250°F|120°C / speed 1 / stir.
Add the cream, salt and pepper to the mixing bowl. Process for 30 seconds / speed 10.

TIPS:
- You can replace the cream with extra stock.
- Take extra care when peeling the celeriac skin off as it is really tough.
- Get adventurous and try steaming a fillet of fish in the steaming tray at the same time as you cook the puree.
