Chicken Consommé is a base broth that fits your Mexican cuisine. But don't worry, if you can't think of any other dish to accompany your consommé, you can always enjoy this on its own!
This Chicken Consommé is made with chicken meat, onion, garlic and some aromatic herbs.
Ingredients
10.5 OZ / 300 G chicken thigh (with bones)
10.5 OZ / 300 G chicken leg (with bones)
2 EA carrot
2 EA celery
3.5 OZ / 100 G onion
2 EA garlic clove
1 EA corn on the cob
1 TSP parsley
1 TSP cilantro
1 TSP epazote
1 TSP peppermint
53 OZ / 1500 ML water
1 TBSP salt
2 TBSP vegetable oil
Directions
Peel the carrots and cut them into chunks. Cut your celery sticks and onion into chunks. Cut your corn cob. Peel garlic cloves.
Add your vegetable oil and the vegetables into the mixing bowl. Close the lid and cook with the measuring cup removed for 5 minutes using the sauté mode.
Add the chicken thighs and legs, cilantro, parsley, epazote, peppermint, water and salt into the mixing bowl. Close the lid and cook with the measuring cup inserted for 25 minutes / 212°F|100°C / speed 1.
Repeat the process to concentrate the flavors for 25 minutes / 212°F|100°C / speed 1. Remove your chicken and vegetables and cool down the consommé.
Consommé is ready to serve. You can store it or use it as a base for other dishes. Enjoy!
