South Asian inspired peanut sauce that goes great with rice or noodles.
Ingredients
2 CLOVES garlic
1 TBSP ginger
3.5 OZ / 100 G crunchy peanut butter
1 OZ / 30 ML soy sauce
1 OZ / 30 G honey
0.5 EA lime (juice)
1 TSP curry powder
17.5 OZ / 500 G chicken fillet
17.5 OZ / 500 G mixed vegetables
1 TSP salt
7 OZ / 200 G rice
70.5 OZ / 2000 ML hot water
Directions
Peel garlic and ginger, add them both to the mixing bowl. Insert the measuring cup, chop for 3 seconds with TURBO button. Use the spatula to scrape down the sides of the bowl.
Add peanut butter, soy sauce, honey, lime juice and curry powder. Insert the measuring cup, chop for 40 seconds / speed 4.
Line the deep steaming tray with greaseproof paper in such a way that sufficient steam can still circulate.
Wash chicken breast fillets, pat dry and place on the greaseproof paper. Spread the peanut butter sauce evenly on top and clean the mixing bowl.
Wash and peel the vegetables and pat them dry. Cut them into bite-size pieces and place in the shallow steaming tray.
Put the rice in the simmering basket and place in the mixing bowl. Pour hot water and some salt in the mixing bowl. Attach steamer and steam for 20 minutes.
Once the cooking time has elapsed, check that the rice and chicken are fully cooked. If necessary, extend the cooking time by a few minutes.
