Ingredients
21 OZ / 600 G salted cod fillet or fresh cod
2 OZ / 50 ML milk
1 EA potato
3 CLOVES garlic
1 PINCH grated nutmeg
1 PINCH pepper
17.5 OZ / 500 ML water
1 TSP salt
Directions
Peel and cut the potato to 1-inch dices.
Add water in mixing bowl with salt. Add the potato into simmering basket and place inside the mixing bowl.
Place cod in the deep steaming tray, cook for 20 minutes / 250°F|120°C / speed 1 / stir. Remove the cod and potato then reserve for later.
Peel the garlic and add into mixing bowl.
Chop the garlic with TURBO button for 2 seconds. Use the spatula to scrape down sides of mixing bowl.
Add the potatoes with milk, mix for 10 seconds / speed 5.
Add the fish, nutmeg, salt and pepper ten mix again for 30 seconds / speed 3.
Serve the cod brandade hot with croutons and black olives. Enjoy your dish!
