1. Cook macaroni.

  • Watch the cooking time of the pasta carefully. The term al dente means “to the tooth”, meaning the pasta will slightly stick to your tooth when done. Overcooking the pasta will result in mushy noodles, and you want to make sure the noodles hold their shape so to absorb the cheese sauce nicely.

What are the variations of the mac and cheese?

  • Add different types of cheese for more intense flavors and added cheesiness. A simple upgrade from mild to sharp cheddar will give this dish an extra bite, but other cheeses such as brie, gouda, Gruyère, and goat cheese also make nice additions. You can even substitute milk with the same amount of cream cheese!

  • Store leftovers of this homemade mac and cheese in an airtight container and keep in the refrigerator for 3 to 5 days. TIP: Mac and cheese thickens as it cools, so you may need to add 1-2 tbsp of milk when reheating to restore its original creaminess.
