This version of Lentil Soup is prepared with chorizo, bacon and vegetables, then topped with avocado slices. It just takes the right ingredients to make this the best lentil soup you have ever had!
Ingredients
3.5 OZ / 100 G spicy chorizo
3.5 OZ / 100 G bacon
2 OZ / 60 ML olive oil
5 EA tomatoes
0.25 EA onion
1 EA garlic clove
1 TSP salt
35.5 OZ / 1 L water
9 OZ / 250 G dry lentils (soaked)
0.5 OZ / 20 G chopped cilantro
3.5 OZ / 100 G avocado slices
Directions
Thinly slice the chorizo before adding your chorizo and bacon to the mixing bowl. Chop your mix on turbo mode for 10 seconds with the measuring cup inserted. Scrape down the sides of the mixing bowl.
Add 1 OZ / 30 ML of olive oil. Using the sauté mode, sauté your mix with the measuring cup removed for 2 minutes.
Add the tomato, onion, garlic clove, 8 OZ / 240 ML of water and salt into the bowl. Chop your mix with the measuring cup inserted for 1 minute / speed 10.
Add the remaining water and lentils into the mixing bowl. Cook with the measuring cup inserted for 30 minutes / 212°F|100°C / speed 2 / stir. Once done, adjust the seasoning.
Serve your soup in a bowl, garnish with chopped cilantro and avocado, then drizzle with olive oil. Enjoy your soup!
Recipe Note
TIPS:
If you want a little bit more spiciness, add 1/2 piece of serrano pepper.
If you want to thicken your soup, take the measuring cup off while it is cooking.
