Let's make this yogurt and oat based dish with raisins and apple running through it. It's a perfect dish to do for mum on Mothers' Day for breakfast in bed.
Ingredients
3.5 OZ / 100 G rolled oats
10.5 OZ / 300 G greek yoghurt
0.75 OZ / 25 G honey
1.75 OZ / 50 G mixed nuts
1.75 OZ / 50 G mixed seeds
1 TSP cinnamon
2 EA green apple
3.5 OZ / 100 G strawberry
1.75 OZ / 50 G blueberries
1 SPRIG mint
Directions
Add the mixed nuts to the mixing bowl. Chop for 10 seconds / speed 5.
Add oats into the mixing bowl along with the mixed seeds and cinnamon. Toast the nuts, seeds and oats for 5 minutes / 265°F|130°C. Remove from the mixing bowl then clean the bowl.
Quarter the apple and remove the core. Add to the mixing bowl and chop the apple for 10 seconds / speed 6.
Insert the butterfly whisk into the mixing bowl. Add the oat mix, honey and Greek yogurt. Mix for 30 seconds / speed 2 / stir. Place in the fridge and allow to chill over night to soften everything up.
If the mix is very thick combine a little water to loosen things up. Serve with fresh mint, strawberry and blueberries.
