Enjoy this steamed fish, perfectly accompanied with pesto and potatoes.
Ingredients
2 EA sea bass
2 OZ / 50 G parmesan
1 OZ / 25 G pine nuts
1 OZ / 25 G walnut kernels
4 CLOVES garlic
5.5 OZ / 150 G sun dried tomatoes
3.5 OZ / 100 ML olive oil
17.5 OZ / 500 G baby new potatoes
1 OZ / 20 G dill
2 OZ / 50 G butter
1 TBSP salt and pepper
17.5 OZ / 500 ML water
Directions
Add your pine nuts to the mixing bowl and toast the nuts for 4 minutes in sauté mode.
Add your walnuts, parmesan, garlic, half of your olive oil and sun dried tomatoes to the mixing bowl then chop up your pesto for 20 seconds / speed 8. Remove the pesto from the mixing bowl and clean out the bowl well.
Prepare your fish by removing the scales and guts from the fish. If your sea bass is large, you may need to remove the head and tail. Cut small slits in the skin and rub the fish all over with salt, pepper and olive oil. Stuff the inside cavity with some of the pesto, reserving the rest for later. Lay your fish on the deep steaming tray. Wash and scrub your baby potatoes and add them to the simmering basket.
Add your water to the mixing bowl and insert the simmering basket. Attach your deep steaming tray and steam both the fish and potatoes for 30 minutes. Once cooked, remove the deep steaming tray and the simmering basket. Clean the mixing bowl.
Roughly chop your dill then add it to the mixing bowl along with the butter, cooked potatoes, salt and pepper. Crush your potatoes for 20 seconds / speed 3 / stir.
Place the potatoes along with the sea bass on the plate and serve with the remaining pesto.
