This is a great, vegan-friendly and heartwarming soup to have in wintertime.
Ingredients
16 OZ / 450 G turnip
2 EA granny smith
3.5 OZ / 100 G yellow onion
21 OZ / 600 ML water
1 TSP ground ginger
0.5 TSP ground turmeric
1.5 TSP fennel seeds
1 TSP salt
0.5 TSP white pepper
Directions
Peel your turnip and onion, then roughly chop. Prepare your apples by removing the skin. Core your green apples, then quarter.
Add your prepared onion and turnip to the mixing bowl. With the measuring cup inserted, chop your vegetables for 20 seconds / speed 6. Scrape down the sides of the mixing bowl.
Add your ginger, turmeric, apple, water and fennel seed to the mixing bowl. Cook your soup with the measuring cup inserted for 25 minutes / 230°F|110°C / speed 2 / stir.
After your soup is cooked, add the salt and pepper to the mixing bowl. Blend the soup with the measuring cup inserted for 45 seconds / speed 8.
