It is a simple but delicious soup. Rich, decadent, and very healthy because it is a keto recipe.
Ingredients
3 OZ / 80 G onion
9 OZ / 250 G cauliflower
2 CLOVES garlic
2 OZ / 60 G almond flour
20.5 OZ / 600 ML vegetable stock
0.5 TSP cayenne pepper
0.5 TSP ground cumin
1 TSP coriander
1 TSP black pepper
1 TSP salt
Directions
Peel and quarter the onion then add it to the mixing bowl to finely chop. Add the garlic and chop for 10 seconds / speed 8. Scrape down the sides.
Divided the cauliflower into small florets. Add cauliflower, almond flour, cayenne pepper, ground cumin, coriander and pepper in the mixing bowl and mix for 3 minutes.
Add the stock in the mixing bowl. With the lid attached and the measuring cup inserted, cook for 10 minutes / 250°F|120°C / speed 1.
Blend the soup for 30 seconds / speed 8. Ladle the soup into a bowl.
