Savory meatloaf, steamed carrots, and a zesty red pepper sauce make this a flavorful and satisfying meal.
Ingredients
2 OZ / 60 G Parmesan
2 OZ / 60 G shallots
10 SPRIGS parsley
1.5 OZ / 45 G breadcrumbs
8 OZ / 225 G ground beef
8 OZ / 225 G ground pork
2 EA eggs
3 TSP salt
4 PINCH black pepper
1 TSP paprika
4 OZ / 120 G arugula
1 CLOVE garlic
6.25 OZ / 180 G red onions
3 EA red bell pepper
2 TBSP olive oil
14 OZ / 400 G canned diced tomatoes
14 OZ / 400 ML vegetable broth
0.5 TSP sugar
2 EA carrots
Directions
Add Parmesan to the mixing bowl. Chop with turbo button for 10 seconds.
Add shallot and parsley to the mixing bowl. Chop for 10 seconds / speed 5. Use spatula to scrape down the sides of the mixing bowl.
Add breadcrumbs, ground beef and ground pork to the mixing bowl. Add eggs, 1/2 teaspoon salt, 1pinch black pepper and paprika. Mix the ingredients for 1 minute / speed 2 / stir.
Transfer meatloaf mixture to a sheet of parchment paper. With damp hands, form into a loaf measuring 7"x3". Wrap loaf with parchment and place into deep steaming tray.
Peel garlic cloves. Peel and halve red onion. Add garlic and onion to the mixing bowl.
Trim red bell peppers and cut into quarters. Add to the mixing bowl and chop for 4 seconds / speed 6.
Add olive oil to the mixing bowl. Remove the measuring cup and cook for 2 minutes / 265°F|130°C / speed 1.
Add diced tomatoes, vegetable broth, 1 teaspoon salt, 1 pinch black pepper and sugar to mixing bowl.
Peel carrots and cut into diagonal slices. Add carrots to shallow steaming tray. Season with 1/2 teaspoon salt and 2pinches black pepper.
Attach the steamer with the shallow tray, close the lid and cook for 50 minutes/ 265°F|130°C / speed 1.
Remove the steamer and set aside. Close the lid and blend for 45 seconds / speed 8. Season sauce with more salt, pepper, or sugar to taste and blend again.
Slice meatloaf and serve on a bed of arugula with carrots and red pepper sauce.
