Ingredients
2 OZ / 50 ML vegetable oil
0.5 EA onion
1 EA garlic clove
2 EA tomatoes
2 EA jalapeno peppers
3.5 OZ / 100 G cilantro
17.5 OZ / 500 ML fish broth
1 TSP salt
17.5 OZ / 500 G sea bass
8 EA shrimps
10 EA mussels
1 TSP jalapeno slices
10.5 OZ / 300 G rice
1 TSP pepper
Directions
Peel and quarter your onion. Quarter the tomatoes. Clean the jalapeno peppers and remove the stalk.
Add half of the vegetable oil, onion, peeled garlic clove, tomatoes, jalapeno peppers, cilantro and a pinch of salt to the mixing bowl. Sauté your vegetables with the measuring cup removed using the sauté mode for 5 minutes / 250°F|120°C. Scrape down the sides of the mixing bowl.
Add 17.5 OZ / 500 ML of the fish broth to the mixing bowl. Blend the mix with the measuring cup inserted for 1 minute / speed 6. Remove the sauce from the bowl.
Pour the rest of the vegetable oil and the rice into the mixing bowl. Sauté the rice using the sauté mode with the measuring cup removed for 2 minutes. Scrape down the sides of the mixing bowl.
Place the sea bass in deep steaming tray and season with salt and pepper. Place the shrimp and mussel in the shallow steaming tray and season with salt and pepper. Add the sauce back into the mixing bowl along with the remaining fish broth and attach both steaming trays. Cook with the measuring cup inserted for 10 minutes / 212°F|100°C / speed 1 / stir.
Remove the steaming tray and stir the rice. Reattach the steaming trays. Cook again for 10 minutes / 212°F|100°C / speed 1 / stir. Once cooked, allow your rice to sit for 5 minutes before serving.
TIP: Do not forget to season the seafood before cooking.
Serve rice with the seafood, then garnish with cilantro leaves and jalapeno slices.
