Get your kids to eat more vegetables by making this zucchini slice. This classic Australian dish is an excellent meal prep for your busy morning or your kids' lunchboxes!
Ingredients
10.5 OZ / 300 G zucchini
5 EA egg
7 OZ / 200 G self-raising flour
0.5 TSP salt
5.5 OZ / 150 G bacon
0.5 EA onion
3.5 OZ / 100 G shredded cheddar cheese
26.5 OZ / 750 ML hot water
Directions
Peel and quarter your onion. Add the onion and bacon into the mixing bowl. With the measuring cup inserted, chop your mix for 5 seconds / speed 6. Scrape down the sides of the mixing bowl.
Cut zucchini into chunks and add them to the mixing bowl. Chop with the measuring cup inserted for 8 seconds / speed 6. Scrape down the sides of the mixing bowl.
Attach the butterfly whisk to the mixing bowl, and then add the eggs, cheese, salt and flour. Mix for 1 minute / speed 3. Remove the mixture from the bowl and pour the mixture into a 7-inch baking sheet lined with parchment paper. Clean the mixing bowl.
Add your water to the mixing bowl and attach the deep steaming tray. Add your baking sheet to the steaming tray and steam your slice for 35 minutes. Once done, remove the lid and allow it to sit for 5 minutes.
Once cooked, slice your zucchini and serve. Enjoy your snack.
