Ingredients
1 TSP fine sea salt
14 OZ / 400 ML vegetable stock
24.5 OZ / 700 G parsnip
7 OZ / 200 G heavy cream
1 OZ / 25 G butter
0.25 TSP white pepper
Directions
Trim the skin off the parsnip, then roughly chop. Add it to the mixing bowl. Chop for 10 seconds / speed 5. Scrape down the sides of the mixing bowl.
Add your stock and butter to the mixing bowl. Cook your puree for 35 minutes / 250°F|120°C / speed 1 / stir.
Add the cream, salt and pepper to the mixing bowl. Process until smooth for 30 seconds / speed 10.
TIP: You can replace the cream with an extra stock.
