Creamy textured rice pudding that is baked in the oven, topped with generous amounts of freshly grated nutmeg.
Ingredients
3.5 OZ / 100 ML cream
1 EA vanilla pod
3 OZ / 90 G sugar
28 OZ / 800 ML milk
1 PINCH salt
7 OZ / 200 G round grain rice (arborio rice)
1 TSP lemon zest
1 EA nutmeg
Directions
Add the milk to the mixing bowl along with the vanilla, cream, salt and sugar. Cook for 4 minutes / 212°F|100°C / speed 1.
Add the rice to the mixing bowl. Cook without the measuring cup for 20 minutes / 195°F|90°C / speed 1.
Preheat your oven to 180°C / 360°F. Empty the contents of the mixing bowl into an oven proof dish. Add lemon zest and nutmeg on the top. Bake the rice pudding for 10 minutes or until golden on top.
Enjoy your dessert! Once cooked, serve immediately with some more fresh cream.
