Place the steak in a double lock bag with the butter, rosemary, Garlic and seasoning.
Carefully submerge the bag in cold water to remove the air. Once the air is out, seal the bag. Make sure water does not run into the bag.
Peel the carrots and parsnip then slice them into rings.
Wash them well and place into simmering basket.
Add water and salt to the mixing bowl, and heat for 8 minutes / 120°F|55°C / speed 1. Automatically we have set to medium rare. Manually change the doneness of the steak if desired.
Add the simmering basket to the mixing bowl with the steak and root vegetables in.
Be careful not to have any air inside the bag otherwise the steak will float.
Heat for 90 minutes / 120°F|55°C / speed 1.
Remove the steak from the bag and dry on some kitchen towel.
Add steak to a pan on high heat and char each side for 30 seconds. Take out of pan and allow to rest. Add a little of oil to the same pan and sauté your vegetables for 2 minutes.
Arrange the steak and vegetables on the plate accordingly.
