A great recipe to use up any old bananas you have. Just a great treat for a teatime snack.
Ingredients
3 EA bananas
5.5 OZ / 150 G all-purpose flour
1.5 TSP baking powder
1.5 TSP bicarbonate of soda
0.25 TSP salt
3.5 OZ / 100 G softened butter
2.5 OZ / 75 G light brown sugar
1 EA egg
3.5 OZ / 100 G walnuts
2.5 OZ / 65 G sultanas
17.5 OZ / 500 ML water
Directions
Beat the butter and brown sugar in a bowl using a whisk or a hand blender.
Beat the egg in a small bowl. Slowly add the egg to the butter mixture and beat it until combine.
Peel and roughly cut the banana. Add the flour, bananas, baking powder, bicarbonate of soda, salt, walnuts and sultanas, then mix until everything combined very well.
Use a 7-inch loaf tin with parchment paper. Remove the batter into the loaf tin.
Pour the water to the pressure cooker bowl and insert the simmering basket. Place the loaf tin covered with aluminum foil inside the bowl and close the lid. Cook in steaming mode for 30 minutes.
