This super easy dessert gives you the sweetness and vibrant colours of blueberries.
Ingredients
9 OZ / 250 G heavy cream
9 OZ / 250 G full cream milk
0.5 TSP / 2 G vanilla extract
2.5 OZ / 75 G sugar
9 OZ / 250 G blueberries
2 SHEETS gelatin leaf
Directions
Add your blue berries to the mixing bowl and puree for 45 seconds / speed 10. Once pureed remove from the mixing bowl and reserve for later.
Add your milk, cream, sugar and vanilla to the mixing bowl. Bring the mix to the boil for 5 minutes / 250°F|120°C / speed 2 / stir.
Add your blueberry mix to the mixing bowl, allowing the mix to infuse for 10 minutes to ensure the maximum flavor. While the mix infuses, soak your gelatin in cold water.
Drain the water from the gelatin then add to the mixing bowl then mix in the gelatin for 20 seconds / speed 4.
Pass the mix through a fine sieve into a large jug, then place into 4 ramekins. Place in the fridge and allow to set for six hours.
Place ramekins in boiling water for 5 seconds then turn upside down onto a plate. Serve with fresh fruit.
