This super quick and easy mole sauce using ingredients you will usually find in your dry store. It does great with the meatloaf.
Ingredients
2 OZ / 60 G shallot
10 SPRIGS parsley
1.5 OZ / 45 G bread crumbs
8 OZ / 225 G ground beef
8 OZ / 225 G ground pork
2 EA eggs
2 TSP black pepper
2 TBSP olive oil
17.75 OZ / 500 G canned diced tomatoes
1 EA onion
2 TSP smoked paprika
0.5 TSP cayenne pepper
1 TSP oregano
1 TBSP cocoa powder
2 TBSP brown sugar
0.75 OZ / 25 G chocolate 80% cocoa content
Directions
Add shallot and parsley to mixing bowl. Chop the mixture for 10 seconds / speed 5. Use spatula to scrape down the sides of the mixing bowl.
Add bread crumbs, ground beef and ground pork to the mixing bowl. Add eggs, 1 tsp black pepper and 1 tsp paprika to the mixing bowl, mix for 1 minute / speed 2 / stir.
Transfer meatloaf mixture to a sheet of parchment paper. With damp hands, form into a loaf measuring 7" x 3". Place meatloaf in a preheated oven 360°F|180°C and bake for 40 minutes.
Peel and quarter your onion and add to the mixing bowl. Chop the onion for 10 seconds / speed 6.
Add olive oil, remaining paprika, cayenne pepper and oregano to mixing bowl, remove the measuring cup and sauté for 5 minutes / 265°F|130°C. Scrape down the sides.
Add the chopped tomatoes, cocoa powder and brown sugar to the mixing bowl and cook with the measuring cup removed for 20 minutes / 230°F|110°C/ speed 3.
Add the pepper to taste along with the dark chocolate. Blend for 45 seconds / speed 8.
Slice meatloaf and serve with the sauce over potatoes. Enjoy your meal!
