This is a quick and easy keto-friendly meal with creamy cheese and savory beef stuffed inside zucchini boats.
Ingredients
2 EA green zucchini
0.5 EA onion
2 EA garlic
10.5 OZ / 300 G ground beef
1 EA egg
1 TSP paprika powder
2 OZ / 50 G parmesan cheese
0.5 EA red bell pepper
2 OZ / 50 G breadcrumbs
3 PINCHES pepper
1 TSP salt
24.5 OZ / 700 ML water
Directions
Slice the zucchini in half and scoop out the seeds with a spoon, then cut in half again.
Peel the onion and cut it into quarters. Deseed the pepper and quarter. Add the bell pepper, parmesan, onion and garlic to the mixing bowl. With the measuring cup inserted, chop for 15 seconds / speed 7. Use the spatula to scrape down the sides of the mixing bowl.
Add the ground meat, egg, paprika, breadcrumbs, salt and pepper into the mixing bowl. Mix your ingredients with the measuring cup in place for 20 seconds / speed 3 / stir.
Generously fill the zucchini with the mixture. Then place the stuffed zucchini next to each other in the steaming tray.
Wash the mixing bowl, then add the hot water. Set the steamer on the mixing bowl with the lid in place and steam for 30 minutes.
Serve with rice on the side or as it is for a great low-carb meal. Enjoy your dish!
