This is an exciting twist on a Sweet potato casserole on thanksgiving. It will add another dimension to the traditional dish.
Ingredients
24 OZ / 680 G sweet potatoes
18.5 OZ / 530 ML hot water
2 OZ / 55 G butter
8 OZ / 225 G marshmallow
8 OZ / 225 G rice puff cereal
Directions
Add water to mixing bowl and attach the deep steaming tray. Wash and peel the sweet potatoes, slice in half and arrange potatoes in the tray. Steam for 30 minutes.
Once the sweet potatoes are cooked, remove from mixing bowl, allow to cool slightly.
Clean the mixing bowl and add the potatoes, mash for 30 seconds / speed 5. Remove potato and clean the mixing bowl again.
Add the butter and marshmallow to the mixing bowl, melt for 6 minutes / 230°F|110°C / speed 3 / stir.
Once fully melted add the rice puffs, mix for 30 seconds / speed 4.
Make sure the mix is fully combined then spread out onto a lined baking tray. The rice puff should be about 2 inches thick.
Once the rice puff had cooled slightly, spread over the sweet potato and allow to set in the fridge for about 20 minutes.
Chop into squares and sprinkle over some chocolate to serve. Enjoy your meal!
