This is watery corn kernels, seasoned with vegetables and served with mayonnaise, lime juice, cheese and chili powder.
Ingredients
1 OZ / 30 G butter
3 OZ / 80 G onion
1 EA garlic clove
2 EA dried red pepper
9 OZ / 250 G fresh corn kernels
17.5 OZ / 500 ML water
2 SPRIGS cilantro
1 TSP salt
4.5 OZ / 125 G mayonnaise
7 OZ / 200 G fresh cheese (crumbled)
2 TBSP chili powder
2 EA limes
Directions
Peel your garlic and onion, then quarter the lime.
Add the onion and garlic clove into the mixing bowl. Chop the ingredients with the measuring inserted for 20 seconds / speed 4. Scrape down the sides.
Add butter, dried red peppers and corn kernels into the mixing bowl. Using the sauté mode, sauté for 10 minutes with the measuring cup removed.
Add the water and cilantro to the mixing bowl. Cook your corn kernels with the measuring cup removed for 15 minutes / 250°F|120°C / speed 3 / stir. Drain and excess liquid using your simmering basket.
Serve the corn in small jars. Add mayo, a little chili powder, lime juice, and cheese into your jars.

Recipe Note
TIPS:
For extra flavor, you can substitute the water with concentrated chicken or beef stock.
You can use frozen corn for this recipe, if desired. If using fresh corn, you will need around 2 cobs.
