Ingredients
1 EA onion
4 EA garlic
1 EA tomato
30 EA dried chipotle
21 OZ / 600 ML hot water
1 OZ / 30 G brown sugar
0.5 TSP ground clove
1 TSP allspice
1 TSP cumin
1 TSP oregano
2 OZ / 50 ML white vinegar
1.5 TBSP salt
2 TBSP vegetable oil
Directions
Cut onion into quarters, reserve one quarter and cut the rest into thin slices. Peel garlic cloves. Removes the seeds, veins and sticks from chili peppers.
Add peppers, water and brown sugar into the mixing bowl. Cook for 15 minutes / 212°F|100°C / speed 2 / stir. Remove from the mixing bowl, then reserve the peppers and water for later.
TIP: Make sure the dried chili peppers are soft.
Add the vegetable oil and the sliced onions into the mixing bowl. Cook in sauté mode for 5 minutes. Remove the contents of the bowl and reserve them for later.
Add the quarter of the onion, garlic cloves, tomato, clove, allspice, cumin, oregano, 5 cooked peppers, white vinegar, salt and the cup of water you reserved. Blend the sauce for 45 seconds / speed 8 with the measuring cup inserted. Keep the sauce inside the mixing bowl.
Add back the sliced onions and the rest of the chili peppers. Cook with the measuring cup removed for 10 minutes / 212°F|100°C / speed 2 / stir.
