This sweet and sour ketchup fits perfectly for savory dishes and a great condiment for meals.
Ingredients
3 OZ / 80 G shallot
3 TBSP olive oil
2 CLOVES garlic
6.5 OZ / 180 G tomato paste
28 OZ / 800 G canned tomatoes
2 OZ / 60 ML apple cider vinegar
2 OZ / 60 ML worcestershire sauce
3.5 OZ / 100 G sugar
1 TSP smoked paprika
1 TSP onion powder
1 TSP salt
1 TSP black pepper
Directions
Peel and halve the shallot, add it to the mixing bowl and chop for 8 seconds / speed 8. Use spatula to scrape down sides of mixing bowl.
Add olive oil. Remove the measuring cup and cook for 3 minutes / 200°F|95°C / speed 2.
Peel the garlic and add it to the mixing bowl. Remove the measuring cup and cook for 1 minute / 200°F|95°C / speed 2.
Add the canned tomatoes, tomato paste, apple cider vinegar, Worcestershire sauce and sugar to the mixing bowl. Add smoked paprika, onion powder, salt and pepper. Remove the measuring cup and cook for 40 minutes / 200°F|95°C / speed 1.
Insert the measuring cup and puree for 20 seconds / speed 8. Then season again with salt to taste.
