A North African spiced grain side dish loaded with mint and apricots.
Ingredients
8 OZ / 225 G couscous
1 EA preserved lemon
1 OZ / 30 ML olive oil
16 OZ / 475 ML vegetable stock
2 TBSP mint
2 OZ / 60 G dried apricot
1 TSP cumin powder
2 CLOVES garlic
2 TSP sweet paprika
1 TSP salt
Directions
Peel the garlic then add to the mixing bowl along with the paprika, cumin, salt, apricot, mint, oil and preserved lemon. Chop for 10 seconds / speed 8. Scrape down the sides of the bowl.
Add the stock. Cook for 10 minutes / 230°F|110°C / speed 1 / stir with the measuring cup removed.
Add the couscous to the mixing bowl. Mix for 10 seconds / speed 3 / stir with the measuring cup inserted. Leave in the mixing bowl for 10 minutes.
Mix again for 10 seconds / speed 3.
Once mixed add into a serving dish and crumble over the top with feta cheese and mint if desired.
