But you can always level up your game by filling your pancakes with cajeta (a caramel made of goat milk), jam, cream cheese, or even beans.
Ingredients
9 OZ / 250 G all-purpose flour
0.5 TSP baking powder
0.5 TSP salt
2.5 OZ / 75 G sugar
1 EA egg
5.5 OZ / 160 ML heavy cream
Directions
Add flour, baking powder, salt, sugar, egg and heavy cream to the mixing bowl. Make the dough using knead mode for 1 minute 30 seconds. Wrap the dough with plastic and refrigerate for 15 minutes.
Cut the dough into small pieces of 30G and shape them into balls. Slightly crush the balls with your hands into 1 cm / 0.5 inch in thickness. Use flour to prevent the dough from sticking.
Cook the gorditas in a frying pan or kettle over medium heat for 3 minutes on each side.
TIP: You can cover them with a lid to speed up the cooking time.
Eat them warm and enjoy your desserts!
