Refreshing salad full of fresh herbs and citrus flavors. Fava beans and beetroot marries perfectly together.
Ingredients
8 OZ / 225 G broad beans
1 TBSP mint
2 OZ / 60 ML extra virgin olive oil
1 EA lemon
2 TSP English parsley
17.5 OZ / 500 G beetroot
1 PINCH salt
17.5 OZ / 500 ML hot water
1 TSP Dijon mustard
1 PINCH pepper
Directions
Wash and peel the beetroot then dice into cubes then place in the simmering basket.
Rinse the fava beans then place them in the deep steaming tray.
Add your water into the mixing bowl then insert the simmering basket
and the deep steamer tray. Steam for 20 minutes.
Remove the deep steaming tray and place the fava beans in iced water to stop them discoloring.
Once cold peel the outer shells off the beans.
Remove the beetroot and allow to cool. Clean the mixing bowl.
Add the mint and parsley into the mixing bowl.
Chop for 2 seconds with TURBO button. Scrape down the sides, add the mustard then the juice and zest of a lemon.
Season generously with salt and pepper and mix for 30 seconds / speed 3. Whilst running slowly drizzle the olive oil into the mixing bowl to make a dressing.
Insert the measuring cup. Add the beetroot and beans into the mixing bowl and mix for 20 seconds / speed 1 / stir. Adjust the seasoning to taste and place into a serving bowl.

If you like your dressing a little sweeter add some honey into it.
